Bacon Cheddar Potatoes

Bacon Cheddar Little Potatoes recipe from The Country Cook. No boiling & no peeling the potatoes! Everyone went crazy over this dish. It's a new favorite for sure!!

Ingredients
  • 1.5 lbs Blushing Belle Little Potatoes sliced in half lengthwise
  • 1 small onion diced
  • 2 tsp seasoned salt
  • 1 tsp garlic salt
  • 2 tbsp butter cubed
  • 2 cups three cheese blend shredded
  • 1 cup cooked & crumbled bacon
  • sliced green onion for topping
Instructions
  1. Preheat oven to 400f degrees.
  2. Spray an 8 x 8 baking dish with nonstick cooking spray.
  3. In a bowl combine potatoes, onion, seasoning salt & garlic salt.
  4. Stir until the potatoes are coated with the seasoning.
  5. Pour mixture into prepared baking dish.
  6. Dot the top of the potatoes with cubed butter.
  7. Bake uncovered for about 30 minutes (until potatoes are fork tender.)
  8. Take it out of the oven (using oven mitts, cause it's hot, right?), then add shredded cheese and crumbled bacon.
  9. Put it back in the oven, uncovered, for another 8-10 minutes (until cheese is melted).
  10. Then sprinkle the top with sliced green onions before serving.
