1 Minute Mug Cookies: 3 Different Cookies Made in the Microwave - Gemma's Bigger Bolder Baking 59

INGREDIENTS
Peanut Butter Mug Cookie
1 Tablespoon (½ oz/15g) room temperature Butter
1 Tablespoon Brown Sugar
1 Tablespoon White Sugar
1 egg yolk
1 Tablespoon Peanut Butter or any nut butter
3 Tablespoons of All-Purpose Flour

METHOD
1. In a microwavable mug mix the butter and sugars together.
2. Add egg yolk and peanut butter and continue mixing .
3. Stir in flour, then mix until all ingredients are fully combined.
4. Microwave for 40-60 seconds (check after 40 seconds to check if it is done, you might have to play around with the timing as all microwaves are different)
5. IMPORTANT NOTE:My microwave is 1200Watts and my cookie took 40-45 seconds. Don’t overcook or they can dry out. Mug cookies are best eaten while still warm.
6. Top off your mug cookie with a buttercream frosting mixed with raspberry jam.

Oatmeal & Raisin Mug Cookie (Gluten free and Vegan)

INGREDIENTS
1 Tablespoon Flavorless Oil (canola, coconut, vegetable)
1 Tablespoon Brown Sugar
1 Tablespoon White Sugar
1 Tablespoon Apple Sauce
¼ tsp vanilla extract, a tiny splash
Pinch of cinnamon
¼ cup oat flour (See how to make it in the video)
¼ cup rolled oats
Raisins

METHOD
1. In a microwavable mug mix together all of your ingredients until they are fully combined.
2. Microwave for 40-60 seconds (check after 40 seconds to check if it is done, you might have to play around with the timing as all microwaves are different)
3. IMPORTANT NOTE:My microwave is 1200Watts and my cookie took 40-45 seconds. Don’t over cook or they can dry out. Mug cookies are best eaten while still warm
4. Try topping your creation with whipped coconut cream and cinnamon, or anything you like.
